Gluten is a big deal because people like me who have Celiac Disease (A lifelong autoimmune intestinal disorder found in about 1% of the population, visit http://www.celiac.org for more information) have a toxic reaction to Gluten. Gluten is the protein found in grains such as wheat, barley and rye. Many of the foods we eat are naturally Gluten free (vegetables, meats, rice, fruit….). The many Gluten free specialty items such as gluten free cookies/cakes/bread but I would not recommend to people who can have the real thing. It is not a trend but rather retailers are accomodating a large group of people who have to strickly avoid Gluten.
